While practicing social distancing, we wanted to come up with fun ways to entertain ourselves as well as not get bored eating the same things over and over again.  What better way to do this than to drink (and eat….we all know what happens when drinking on an empty stomach) around the “world”!  We had plenty of leftovers and a lot of fun trying some new recipes and some old ones we hadn’t used in a couple of years.  We loved all of the meals and will definitely be making them again.    Check out our “travels” below (clearly the pictures are photoshopped because, as you know by now, we can be cheesy sometimes) and try a new recipe or two (links below)!

Day 1: Mexico

Food: Shredded Chicken Nachos

Drink: Margaritas

The recipe we use for this (see above) is actually for chicken tacos, but we use it to make the pulled chicken and then just put it on the nachos. Building the nachos is pretty simple. We just do a layer of chips, chicken and cheese, and repeat for a total of 2 or 3 layers, depending on how many nachos you want. Once done, you can top with sour cream, guacamole, green onions, jalapenos and whatever else you want.

We’ve made this a few times, so this time we decided to make our own tortilla chips. We used corn tortillas and did a combination of fried and baked. For both, we cut the tortillas into quarters. For the fried, we filled a cast iron skillet with about an inch of peanut oil and heated it to 350 degrees. We then cooked about 8 chips at a time until we had about half the amount of chips that we needed. For the baked chips, we brushed the tortillas in melted butter, then sprinkled them in a seasoning mixture of garlic powder, onion powder, cayenne pepper, and pepper  (shout out to Lorenzo from the “4 Levels of Nachos” video. We then baked those tortillas for about 10 minutes on 375.

Day 2: Italy

Food:  Butter Cookies and Sweet Cream Gelato (from Whole Foods)

Drink:  Negroni and Lemon Creme

Day 3: China

Food: Cauliflower Fried Rice and Egg Rolls (lazy cooking day)

Drink: None (we know, LAME!  We may have partied a little too much for Cinco de Mayo…)

Day 4:  Spain

Food: Paella

Drink: Sangria (we didn’t use this recipe this time, but we will try this one in the future!)

Day 5: Japan

Food: Take-out Sushi from Kabuki (another lazy day)

Drink: Sake 

Day 6: France

Food: Croissant French Toast

Drink: Mimosas 

Day 7: Scotland

Day 8: Germany

Food: German Pretzels

Drink: Schöfferhofer Hefeweizen Grapefruit Bier

Day 9: United States (New York)

Food: Pizza
